Mustard Potato Salad

Ingredients:
4 # Red Skin Potatoes diced into ¼ inch chunks and boiled till tender and cooled
½ a medium red onion diced small
4 ribs celery small dice
1 dozen hard boiled eggs peeled and quartered
¼ cup yellow mustard
1 ½ cups mayonnaise
1 Tablespoon lemon juice
Kosher salt and pepper

In a large bowl place the potatoes, onions, celery, and eggs. In a second bowl mix the mayonnaise, mustard, and lemon juice. Place the dressing over the potatoes and fold it in as to not break up the potatoes. Season with the salt and pepper. If you can let it sit in the fridge over night.

Variation: Remover the mustard and mayonnaise. Add 2 cups Ranch Dressing and 2 cups real bacon.
