1 Pineapple peeled and sliced
3 T brown sugar
1 Mango peeled, pitted, and diced
½ a medium red onion diced
1 Jalapeno fire roasted,seeded, and diced
Cilantro to taste
Cumin to taste
Salt and pepper to taste
Peel and slice the pineapple, season it with the brown sugar. Peel the mango and cut it from the large pit, and dice it. Peel and dice the red onion. Fire up your grill and place cherry or apple wood chips in a foil pouch and poke holes in it, place the pouch over the flame, when it starts to smoke put the jalapeno pepper and the pineapple grill for 4 minutes on each side and then remove and chill. When the pineapple is chilled, dice it. Remove the stem from the pepper as well as the veins and seeds then dice small. Now that you have preparation done, combine all the ingredients and season to your liking with the cumin, cilantro, salt, and pepper. Enjoy!!! |
