6 Med. Sized potatoes Diced ¼ inch dice
1 # Bacon diced
1 Yellow Onion Diced ¼ inch Dice
2 Jalapeno Peppers Seeded and Chopped
8 oz Cream Cheese
8 oz Shredded Monterey Jack Cheese Split in half
Salt and Pepper to taste
Brown the bacon, then drain as much of the bacon fat as possible, add onions and
peppers and cook for 5 minutes. Add the diced potatoes and cook for another five
minutes with lid on. Add the cream cheese and half the shredded cheese. Bake for 45
minutes stirring every 10 minutes. When you can smell the goodness, add the
remainder of the cheese and melt it on top |
