Just “Smokin” Chili

1/4 Cup Butter
3 T Corn meal
4 cloves garlic chopped
2 sweet onions diced
1 jalapeno pepper seeds and ribs removed then diced
1 Green Chili (Anaheim) diced
3 chipolte peppers diced and some of the sauce added
6 ripe tomatoes diced
3 cups strong coffee
2 cups V-8 Juice
2 cups tomato paste
Cumin, chili powder, brown sugar, salt and pepper to taste.
2 # of smoked pork butt or rib tips diced
Chicken and beef base to season

In a medium size pot, melt the butter and sauté the garlic, onion, and peppers, when this is done, add the corn meal and let it soak up some of the juices, then add the diced tomatoes, adobo sauce from the chipotle peppers, and the coffee. Let this simmer for 20 minutes add the V-8 and tomato paste and simmer for 30 minutes. At this point add the pork and let it come back to a simmer. Check your seasoning and adjust to your liking. If flavor is not rich enough for you add 1 T Beef base and ½ T chicken base. Keep on a low simmer till service. Chili should be rich and meaty. Enjoy!!!
