Cake:
1 Lemon Cake Mix
3 eggs
⅓ Cup Melted Butter
1¼ Cups Evaporated milk
Combine the above and bake in a 10in Dutch oven. Bake till center is 180 degrees or a tooth pic inserted in the center comes out clean. Cool the cake.
Filling
2 Fresh peaches sliced (reserve 5 nice slices for garnish)
12 oz of raspberries (keep some for garnish)
2 Blocks cream cheese at room temperature
1 T Vanilla
1 C Powder sugar
Combine the cream cheese, vanilla, and powder sugar. Blend them till smooth and place in a piping bag and set aside.
When the cake is cool, slice it in half and fill the center with fresh peaches, ¼ of the sweet cream, and Raspberries. If the peaches and berries are out of season, use peach jam and raspberry preserves.
Place the filled cake on a lid, and garnish with the remaining cream, berries, and peach slices. When cake is garnished sprinkle with powder sugar and ENJOY!!!!
