1 boneless turkey breast
Seasoning of your choice
1 cup Craisins®
1 cup pine nuts, toasted
2 cups Italian cheese blend
2 jars prepared pesto
2 large onions, sliced and caramelized
½ cup butter, melted
Place the turkey breast on the cutting board and slice it open like a book, then place it between two pieces of plastic wrap and lightly pound the breast so it is an even thickness throughout. Season and then spread pesto, pine nuts, onions, cheese, and Craisins®. Roll breast and tie it up with butcher’s twine. Brush the breast with melted butter and season it. Place in an Ultimate Turkey RoasterDutch oven and lightly smoke for 1 hour. Remove breast and place in a 12-inch Dutch oven at 350 degrees. Remove twine and brush with butter and season again with your choice seasoning.
Note: How to use the Turkey Roaster: Place the bottom grate in the Dutch oven, then place 6-8 coals on the grate, then add flavored wood chips. Place the top grate over the coals, then the turkey breast on the grate. Leave the lid ajar so the coals can get air and the smoke can escape. |
