Ingredients:
6 chicken breasts
6 slices of smoked ham
6 slices of Swiss cheese
1 sleeve Ritz style crackers
1 cup Parmesan cheese
2 cups plain yogurt
1 table spoon seasoning salt
1 tea spoon garlic salt
Directions:
Butterfly the chicken breasts and layout on plastic wrap or a dedicated cutting board. Place one slice of ham on the chicken breast followed by one slice of cheese. Roll up jelly roll style, wrapping tightly. Place into a cooler until ready for breading.
Crush your crackers and combine with the Parmesan cheese. In a separate bowl, combine the yogurt, seasoning salt and garlic salt. Dip the chilled chicken breasts in the yogurt then into the crumb mixture, make sure to keep it tight. Place them in a 14 inch dutch oven and bake till the internal temperature is 155 degrees and let it carry over to reach 165 when done. ENJOY!!!!!
Sauce:
½ cup mayonnaise
¼ Cup Honey
¼ Cup Dijon Mustard
salt and pepper to taste
Combine all ingredients. Serve along side the chicken cordon bleu. |
